Lovers of Rum rejoice giving thanks to the sugar cain plant which both light and dark rum gets made from. Rum is distilled from cane juice and the color is influenced by the aging process which can be long or short. Once rum leaves the still during distillation, it must be aged in wooden barrels to become rum. This determines color (from pale white to deep brown). Barrels are made from a variety of woods such as sherry casks and bourbon barrels. As rum matures in wooden barrels over time, it takes on characteristics of wood while picking up colors ranging from light gold to mahogany.
