Recognized for its Zinfandel, Paso Robles has the ideal set of climatic conditions to coax forward the varietal’s inherent fruitiness. Situated among the rolling hills and spanning valleys of the Central Coast, this large, diverse appellation has warm, arid days and is cooled by breezes that sweep in from the nearby Pacific at night. The dramatic shift in day-to-night temperatures allows the grapes to linger on the vine and develop rich, concentrated flavors. We sourced the fruit from several vineyards throughout the region, balancing the attributes of each for a complex, layered wine. To create this appellation blend, we selected fruit from several diverse sites within Paso Robles. The fruit was harvested at the peak of maturity, just as the grapes reached the ideal balance of sugars, acids and tannins. We then vinified the individual vineyard lots separately. Regular pump-overs were used during fermentation to maintain good contact between the rising cap and juice, allowing for maximum extraction of flavors. When fermentation was complete, we aged the wine for 14 months in a combination of French and American oak. We then blended the lots together, creating a well-balanced wine representative of this appellation.
