Founded in 1790, Pares Balta is located in the Penedes winemaking region of Catalonia, Spain. In the 1970’s the Cusine family took ownership of the winery. Today, the estate is managed by a 3rd generation ‒ Messrs. Joan and Josep Cusine Carol who focus on the business side of the winery and their wives Maria Elena Jimenez and Marta Casas who make the wines. Only six miles from the Balearic Sea, the five estate vineyards are planted on stony, calcareous soils comprised of clay and marine fossils at elevations of 560-2,624 feet. They are certified organic by the Catalan Council of Organic Production. The estate’s 494 acres are planted primarily to indigenous varietals ‒ Xarel-lo and Macabeo are grown at lower elevations while Parellada, and Garnacha are planted at higher elevations. With a range of soil types and microclimates Chardonnay, Sauvignon Blanc, Gewurztraminer, Pinot Noir, Mencia and Merlot are grown at higher elevations whilst Cabernet Sauvignon, Merlot, Cabernet Franc, Syrah, Tempranillo, Muscat, Petit Verdot and Touriga Nacional are planted in the estate parcels that have a warmer growing climate. In addition to Cava, the portfolio includes three levels of still wines: the accessible Origen series, R-Evolution wines produced with indigenous varietals and Microcuvee, limited edition wines produced only in the finest vintages.

Wine maker notes
Pale yellow color. Medium intensity on the nose with toasty notes combined with aroma of pear and apple. Fresh and alive in the mouth with dominating notes of fruit. Light and soft with a pleasant finish. Serving temperature: 6 - 8° C

Technical notes
(Parellada/Macabeu/Xarel-lo). Produced in the traditional Champagne method for which the second fermentation occurs in the bottle, the wine was aged on its lees for at least 12 months.

Producer
The roots of Pares Balta goes all the way back to the 18th century. In 1790 the first vines were planted on the estate that now surrounds the winery. Today however, more than 220 years later, almost everything is different. In 1978, Mr Joan Cusine Hill took over the winery in 1978. Born in 1917 in Bellvei del Penedes, Mr Joan Cusine Hill came from a family of vine growers and, already from the age of seven, he helped his father to cultivate the vineyards and never stopped working. At 80 years old he even helped his grandsons to care for a part of the vineyard. His son Joan Cusine Cusine started to manage Pares Balta in the eighties and released its first still white wine, “Blanc de Pacs” which is still produced today. At the end of the eighties the first red wine from the company was produced, and since then he has enthusiastically been attempting anything that could raise the quality of the wines. Since 2000 the management has been in the hands of the two grandsons, Joan and Josep Cusine Carol. They have brought new and fresh ideas into the company, but have also shown respect for its tradition and guarded the heritage. The wives of Joan and Josep, Maria Elena Jimenez and Marta Casas are the winemakers and oenologists. They have continued to develop new wines and increased the focus on quality. Today, Pares Balta produces a wide range of high quality wines and cavas that has been both nationally and internationally acclaimed. Always keeping quality in view, the aim is to produce some of the best and most interesting wines in the world.
