Using ingredients that include hand-zested Valencia oranges and pummelo, Leopold distills each botanical separately so he can retrieve the desired flavor notes, and then blends the distillates together. Leopold says this process is especially worthwhile when handling juniper berries, which can contribute a tannic astringency in a typical gin distillation; by distilling them on their own, he's able to capture the juniper's crisp sweetness.
A small batch American gin, production is limited to 50 cases at a time and the botanicals include 'hand-zested American pummelos'.
