The spirit that catapulted Hans Reisetbauer to stardom, this Poire Williams style pear eau-de-vie is produced by Hans Reisetbauer in Axberg, Austra. Hans hand-harvests organic estate-grown Williams pears (aka Bartlett pears) from the Reisetbauer family farms grove of nearly 17,000 Williams pear trees underripe, ripe, and overripe to capture the purest and most complete expression of the fruit for this eau-de-vie. After harvesting, the fruit is stored for 2 days to ripen further before being mashed and fermented between 1617 C (6063 F) in stainless steel for 810 days. Twice-distilled in a Christian Carl copper pot still and rested for 3 years in stainless steel, it takes 12. 2 kg (nearly 27 lbs) of pears to produce this eau-de-vie. The entirety of the pear is on full display, from the skin to the flesh, to the point where it almost evokes a synesthetic sensationyou can practically feel the texture of ripe pear in your mouth. Gently warming on the palate and tasting of perfectly ripe pear with just a touch of acidity to brighten the finish, a creamy texture ensures the flavor and sensation lasts. 41. 5% ABV.
