The HSE Sauternes Finish 2013 vintage. Distilled in 2013, this rum was aged for 8 years in American oak barrels before being matured in barrels of Château La Tour Blanche, a Sauternes premier cru classé wine. Tasting notes: On the nose, the French oak gives off fruity and vinous aromas that seem to come straight from a cellar in the south of France. Dried fruits such as apricot rub shoulders with fresher notes of pear and peach. With aeration, the cellar has moved and we find ourselves transported to the West Indies. The sugar cane juice and spices take control, for an exotic and concentrated, invigorating profile. The rum then gains in strength and intensity, without forgetting to be elegant, with pretty dried exotic fruits and a cigar box type of woodiness. On the palate, the attack is rather tannic and spicy, then the cane juice intrudes on the taste buds with the help of a nice lime acidity. Once settled, the rum begins to coat the palate with a soft beeswax that is bursting with sweet spices and blond tobacco. The yellow fruits are melted into an almost creamy syrup, which brings a good fullness and a very pleasant texture. The finish tightens a little on citrus zest and cane juice, then a peppery woodiness settles in the length.
