The Zierfandler and Rotgipfler grow particularly well in the Gumpoldskirchen region and the blending of both varietals produces wines characterized by their exceptional spiciness. Zierfandler, also known as Spatrot (’late red’) because it turns red just before harvest. It is known for its aging capacity, it also impairs a nutty bouquet to the wine along with an elegant sweetness to the palate. Rotgipfler is usually blended with Ziefandler and brings more in depth aroma to the blend. It is almost exclusively found in the Gumpoldskirchen of the Thermenregion of Austria and the total surface covered by this varietal is only around 120 hectares. Stift Klosterneuburg has been growing these two native varieties for a few decades near Gumpoldskirchen in the Thermenregion. Thermenregion is situated south of Vienna and Gumpoldskirchen is located in the northern part of the appellation where white wine varietals, especially Ziefandler and Rotgipfler thrive particularly well. Both grow exceptionally well in limestone rich soils. This is a blend of 50% of each varietal. After picking and pressing the must is left to macerate on the skins over six hours. Fermented in stainless steel tanks the wine is bottled in February the year after harvest.
