75% Seaview Vineyard, 25% Wairau Vineyard. Yealand’s Seaview Vineyard is New Zealand’s most coastal vineyard. Here the vines battle against the elements producing small berries with thick skins and wonderfully rich and intense flavors. The Wairau is a sub-region of Marlborough. The Yealands Wairau Vineyard is the most northerly planted vineyard. Located primarily on river beds, the soils have a high composition of river stones which reflect light and heat into the canopy, resulting in their distinctive tropical fruit characteristics. Wine maker notes Seven parcels of Sauvignon Blanc from the Seaview Vineyard and two from the Wairau Vineyard were selected to blend this wine. The parcels were harvested individually over a period of three weeks. The fruit was crushed, de-stemmed and gently pressed. The juice was cold settled for 72 hours, the clear juice was racked off, a long, cool fermentation followed in stainless steel tanks to capture and enhance the fruit flavors. Each of the nine individual parcels was fermented separately using a range of selected yeasts, they were then blended, stabilized, filtered and bottled.
