During our 80+ years of winemaking in California, we?ve enjoyed many perfect moments under the shade of its ancient oak tree. It?s the ideal place to relax, watch the sun set and bask in the beauty with friends and a delicious glass of Belle Ambiance wine. Technical notes Our winemakers turn to different parts of the vineyards to source the fruit for our Belle Ambiance Dark Red Wine Blend - warmer areas for ripe fruit flavors and cooler sections for acidity and structure. fruit for this wine was picked during the cool of the night, when the flavors and tannin ripeness had reached their peak. After being delivered to the winery, the fruit was de-stemmed and left to cold soak for 24 hours before beginning fermentation. 100% of the wine for this blend underwent malolactic fermentation. A portion of the blend was aged on a combination of French and American oak for several months.
