Distillation: First distillation separates the "unwanted" types of alcohol and collects the best ones in a low - strength product called brouillis. Second distillation of the brouillis makes a new separation of alcohols, giving an "eaux de vie," of approximately 70% alcohol to conserve all the aromas. Aging process: Croizet always distillates the wine with 10% of lees, which produces more complex aromas and essential oils in the Cognac. This process requires more aging than the regulatory 2 1/2 years. Croizet V. S. is aged for an average of 7 years. The Cognac is then stored in French oak casks.

Pierre Croizet’s cognac vineyard was born from the work of many generations. This vineyard, mainly planted in the commune of Triac Lautrait, brings together 30 hectares around a typically Charentaise farm, located in the heart of the village of Lantin, close to Jarnac. Here, we are in a privileged location, the AOC terroir of Fins Bois, formerly known as Champagne de Jarnac, because it is situated on the borders of La Grande Champagne, Cognac’s premier cru. |
